What you need:

1 batch/jar of your favorite pasta sauce (I used my homemade spaghetti sauce)

Cooked lasagna noodles

3 packages of cream cheese, softened

2 packages frozen chopped spinach, thawed

Your favorite Italian cheese, grated (I used fresh grated Parmesan)

What to do:

Mix together cream cheese and spinach until it is creamy enough to spread easily.

Place cream cheese mixture in lasagna noodle leaving about 1/4″ of noodle on each side and at least 1/2″ of noodle on each end.

Roll lasagna noodles into “pinwheel” type shapes.

Place rolled lasagna noodles in baking dish.

Top with sauce.

Sprinkle cheese on top.

Bake in 350 degree oven for 25-30 minutes, making sure cheese on top is completely melted.

Yes we have a few critters. Wouldn’t have it any other way. Each of them came into my/our lives as a baby. The 3 cats were mine before I married my hubby and since then we have added the dogs. They are funny and keep us on our toes. Each one has their own personality. Dumbo is definitely a cat. She avoids most people and wants attention on HER terms. She is very soft and has a very loud purr. Oreo Is a people cat, especially with men. She is very friendly and loves to eat people food, specifically McDonalds french fries. Jet seems to be bipolar. The sweetest cat in the world purring away and then out of nowhere she growls and bites. She is a feisty one. Weasley fits all stereotypes of a weenie dog. She is MY dog but loves my husband too. Hagrid is happy go lucky and not the smartest dog in the world. He is big but thinks he is s small lap dog. Luna is still in puppy mode. Full of energy and a little on the mischievous side.

Bad Bad Bad Week

Some weeks all plans go out the window. All good intentions are put aside. Some weeks you just have to be thankful for what you have. Remember to tell those who you love that you love them. Things can happen in a blink of an eye. In a split second. Thankfully this week all we lost was a car. A beloved car, but just a car.

I am going to attempt to come up with meal plans every Friday for the following week. Friday works best because Saturday is the best day for my husband and I to do any shopping that needs to be done. If I do my meal plan then I can make my grocery list from that. I already have everything for basic side dishes on hand so I pick those when it comes time to cook (unless I’m doing something special). Here goes this week’s!

Sunday 3/3: Dinner out with a friend.

Monday 3/4: Porcupine Meatballs (Grandma’s recipe)

Tuesday 3/5: Chicken nuggets

Wednesday 3/6: Sloppy Mikes (a homemade variation on Sloppy Joes stolen from a friend)

Thursday 3/7: Chicken tacos

Friday 3/8: Pork chops

Saturday 3/9: This is our splurge day when we eat out.

This is my first attempt at a blog. I would love to start sharing my meal plans, stockpiling tips, recipes, and daily happenings. Our life consists of crazy work hours, 3 senior cats, 3 energetic dogs, and trying to keep our heads above water. Here goes nothing!
