Archives for the month of: April, 2013

What you need:

1 batch/jar of your favorite pasta sauce (I used my homemade spaghetti sauce)

Cooked lasagna noodles

3 packages of cream cheese, softened

2 packages frozen chopped spinach, thawed

Your favorite Italian cheese, grated (I used fresh grated Parmesan)

What to do:

Mix together cream cheese and spinach until it is creamy enough to spread easily.

Place cream cheese mixture in lasagna noodle leaving about 1/4″ of noodle on each side and at least 1/2″ of noodle on each end.

Roll lasagna noodles into “pinwheel” type shapes.

Place rolled lasagna noodles in baking dish.

Top with sauce.

Sprinkle cheese on top.

Bake in 350 degree oven for 25-30 minutes, making sure cheese on top is completely melted.

Sides will be decided when preparing meals. I have a huge stockpile of assorted side dishes to choose from. I need very little from the store to complete this meal plan which is one of the reasons I stockpile. It’s nice to not have to run to the store constantly.
